    Description

    CARO was born of the alliance between; two wine cultures, French and Argentine; two noble grape varieties, Cabernet Sauvignon and Malbec; and two renowned wine families; Domaines Barons de Rothschild (Lafite) and Nicolas Catena. Vignerons since the 19th century, these two powerful organizations have combined their deep knowledge of Mendoza’s high altitude terroir and the art of winemaking to create a unique wine: CARO. Two noble grapes, two families, one dear and elegant wine.
    The vineyard locations for the Cabernet Sauvignon are 40% from a 20-year-old vineyard in Agrelo, a region 3,117 feet in elevation, and 10% from 30-year old vines in El Cepillo la Consulta, with an elevation of 3,773 feet. The vineyard locations for
    Malbec are 10% from a 12 year old vineyard in Tupungato at 4,593 feet elevation and also 40% from a 53-year-old vineyard in Vistalba, at 3,609 feet elevation. Throughout the season we monitor the vineyard technique, irrigation management
    and bud thinning to ensure low yields in balance with the canopy, good ventilation and illumination.
    Climatic conditions were rather cool in 2014. The vineyards were not disturbed by any major meteorological incidents. The season began with a cool frost-free Spring allowing good flowering. The summer was hot and stable, resulting with grapes changing color and beginning to ripen around the usual dates. From the start of ripening to the harvest, temperatures were cool and stable and the climate was generally dry. These conditions were ideal for the ripening of the Cabernet Sauvignon and preserved the characteristics of the Malbec (aromas of dried fruit, floral notes and an intense purple color). We started picking CARO Malbec from Las Compuertas at the beginning of April, and we ended with our cooler areas of Cabernet Sauvignon from Gualtallary on April 28th. The grapes were hand-picked, de-stemmed and crushed before fermentation. The fermentation lasted between 7 to 14 days under selected yeast using the traditional method with pumping-over and rack and return. Maceration lasted between 10 to 20 days for the Cabernet Sauvignon and 7 to 14 days for the Malbec. Malolactic Fermentation is15% in barrels and 85% in stainless steel vats. The ageing is carried out for 18 months in French oak barrels. Blending is performed at the moment of the first racking. The barrels are all made at Domaines Barons de Rothschild (Lafite) cooperage in Bordeaux.
    Intense ruby color. On the nose, aromas of red and black fruit aromas mingled with hints of mocha and spices. Evolves slowly, revealing layer after layer of elegant fragrances. On the palate, the acidity is refreshing and persistent. Well-balanced tannins contribute to the harmony and smoothness of the palate.
